Shirazi thyme (Zataria multiflora) or Azarba (scientific name: Thymes) is a genus of the mint family. Thyme has about 350 species. There are 14 species of fragrant and perennial plants in Iran.
This genus is very close to Marzangush and grows in mountainous areas.
The nature of thyme in traditional medicine is hot and dry, and consuming too much of it is not recommended for bilious people (with hot and dry temperament). Thyme itself is considered as a remedy for many foods such as fresh cheese, buttermilk and yogurt, edible mushrooms, green beans, green peas, green beans, all kinds of fish, heart meat and potatoes, and the remedy for thyme is based on what is stated in traditional medicine books. It is grape vinegar.
About 3 or 4 years after planting, thyme becomes woody and needs to be replanted. Thyme normally grows to a height of about 15 to 20 cm. During the summer, you can harvest the leaves and flowers of thyme whenever you want, but this is usually done in the middle of summer.
