It is a plant from the Oleaceae family, a tree (sometimes also seen as a shrub), evergreen, 5 to 7 meters high (in the right conditions, its height reaches 10 to 15 meters), with a wide canopy, A thick trunk, green-gray leaves, hard, fleshy, oval-shaped fruits that turn purple, then brown, and finally black when ripe, and a wooden core. There are two types of olives, one of which grows wild in the desert and the other is cultivated. The unripe fruit is cold and the ripe fruit is hot. Leaves, fruits, branches and gum make up the medicinal organs of this plant, and considering that olive is a tree that does not store, its leaves can be collected throughout the year, but the best time to collect them is when the plant flowers. That means it is May. Olive oil is a greenish-yellow, clear, transparent and slightly sticky liquid that is extracted from the middle of the olive fruit. Most of the time, this tree grows in a moderate and humid climate. It has a wide distribution in Iran, among which the following regions can be mentioned: North (Manjil, Rudbar and Hasan Abad Chalus), North East (Gorgan, Shah Pasand, Behshahr and Ali Abad) and South (Fars, Kazroon) , between Shiraz and Bushehr, Kerman, Bam, Maymand, Bisheh and Sefid Dasht Lorestan)
